- ancho chile powder
- smoked paprika
- ground cumin
- garlic powder
- dried oregano (Mexican preferred)
- onion powder
- ground coriander
- cayenne pepper
- ground cinnamon
- kosher salt
- black pepper
Instructions

Whisk together olive oil, apple cider vinegar, and tomato paste until smooth. Add all dry spices and mix into a thick paste.

Toss with crumbled tofu and work the paste into each piece. Rest at least 15 minutes — overnight in the fridge for deeper flavour.
